In the Southern California coastal community of Carlsbad, just 45 miles from downtown San Diego will be the home of Jimmi’s Red Hots. Jim McCabe and his wife Jenniemae are the owners of this eatery and Jim brings to Carlsbad his expertise in the New York style hot dog. Jim is having his hot dogs and sausages shipped from Calabresella’s Imports of Rochester New York. Dominic Mammoliti runs this distributorship selling numerous products including the famous Zweigle’s hot dog. The history of the Zweigle hot dog dates back to 1880 when Wilhelm Zweigle and his wife Josephine opened a small sausage shop in Rochester. For 125 years the Zweigle family has been dedicating their lives to making their hot dogs one of America’s favorite food. Jim McCabe is bringing the Zweigle old fashion quality and dedication to Southern California. January 2006 will be the grand opening of “Jimmi’s” and they will be featuring the Zweigle Red Hot as well as the white hot. What is a white hot? A white hot has no sodium nitrite added to give the hot dog its red color. So whether it’s a red or white, you get the famous high quality of Zweigle’s.
What is a New York style hot dog?
For years the western New York area has been known for its fine food. Immigrants migrated to the area in the 1800’s and brought with them the recipes from the “Old Country”. Polish, Germans, Italians, the Irish and many others have a strong foothold in the food industry of Western New York. Jim McCabe was born and raised in Buffalo New York and he is bringing that history of food preparation to Carlsbad California. The New York style hot dog has a natural casing and is cooked on an open flame grill. When the “dog” is done the casing pops open and then the condiments are loaded on. The treat is all the condiments that are available at “Jimmi’s”. Weber’s Horseradish mustard and Piccadilly Relish are some favorites. Sauerkraut, grilled peppers and onions, nacho cheese, sautéed mushrooms and Jimmi’s famous homemade chili are some others. The list goes on with BBQ sauce, special hot dog sauce, sliced jalapeńo’s, shredded cheese, pepperchini, diced tomatoes, and of course ketchup, mustard, relish and dill spears. Any and all of this with a soft sesame seed bun gives you the New York style hot dog.
What is frozen custard?
Genuine frozen custard has at least 1.4% egg yolk (pasteurized) and at least 10% milkfat, and is made in a special machine created for producing frozen custard only. What makes our product so special is that we use the finest ingredients in the business and don't cheapen the product with preservatives. Our mix is made up of vanilla, butterfat, sugar and egg yolks. The final result is frozen custard, a product unlike ice cream or frozen yogurt, which is creamier, smoother, and denser than anything on the market. One taste and the differences are clear. Our frozen custard is the best thing out there and it's here to stay. In our custard machine, the custard travels from a refrigerated hopper through a valve into a freezing chamber lined with beaters. As you watch, the frozen custard is pushed through (extruded out) the front of the machine and into a waiting bucket, ready to be served. Because it is not held in the chamber, there is very little air beaten into the custard, referred to as "overrun." This low overrun (20-25%) is what gives frozen custard its wonderfully dense and creamy texture, or "mouthfeel."
By comparison, soft-serve custards, yogurts, and ice creams are made using what is known as a batch freezer, where the mixture remains in the machine and the overrun is as much as 100%.Since it is freshly made, our custard is served at a temperature of 17-20 degrees, and is neither flash-frozen nor held at sub-zero temperatures. This allows the custard taste to really come through. Wait 'til you taste the difference!
